A really important attribute when you are evaluating an EVOO, is the acidity. There are many extra virgin olive oil out there, what makes the difference is the the acidity percentage. The closer the value is to zero the better you are. Palacio de los Olivos has a value of 0.1%, a true Spanish First Class Product.

Picual olive

This natural olive oil is made of only one kind of olive: Picual. Why is this better? Well, it allows for a better quality control since (at least in this case) there is only one source. Yesteryear, most of the oil produced in Spain was done by the local cooperative, meaning different olive producers will use the same mill, in an effort to save costs. Now, if all the farmers maintain the best possible quality, the final Oil will be have the same standard. But the soil attributes, the location of field, even the water quality and quantity, to name a few, can influence the end result of the taste.

This Spanish First Class EVOO flavour, is fruity, and very fragrant, with some bitterness and spicy. Hints of fig, fresh grass and tomato, some touches of almond, apple and banana. It has some bitterness and itching savour, which are the two positive attributes of an oil obtained using cold extraction.
