Ample intensity of green fruitiness, with notes of fresh herbs, with hints of peach, fig tree and tomato.. On the palate presents a distinct bitterness and medium pungency, with a long lasting aftertaste of green leaves.
The Picual olive is medium ripe, with high good-fats content and good extractability. It is noteworthy that it has a very thin skin and a pulp of medium/low consistency, which represents an added difficulty in obtaining high quality oils. Its intrinsic composition is especially balanced with a high content of oleic acid, monounsaturated fatty acid of high nutritional interest, low content of linoleic acid, medium palmitic acid content, and high content of tocopherols (vitamin E) so the amount of total polyphenols, natural antioxidants of the oil, is very high. Which provides specific sensory characteristics in addition to the great antioxidant value, with high resistance to oxidation and consequently to rancidity, being then able to exceed two years on its date of preferential consumption under appropriate conservation conditions.
